We’re delighted to be announce we’ll be opening a branded new food and drink offering at Ruby’s from Wednesday 27th October. “Corrochio’s” is a new bar and restaurant by our long term colleague, chef and cocktail expert Daniel Corrochio.
Born from Daniel’s two passions – food and heritage spirits from his homeland of Mexico – the new underground late-night spot will feature a menu of authentic Mexican dishes, designed to go alongside lesser-known Mexican spirits and inventive cocktails. This is authentic Mexican food, by proper Mexican cooks.
The drinks menu will feature, but not be limited to an excellent range of Tequila, Mezcal, Sotol and Raicilla, representing different regions throughout Mexico. The cocktails, some of which Daniel has been developing for the past 5 years.

Tucked away next to the main bar at Ruby’s, with its own separate entrance and just 30 covers, the intimate underground bar & restaurant has been sympathetically styled, rather than designed. The bare brick work left untouched, simply adorned with quirky Mexican artwork, low lighting, cosy fireplace…and a few surprises.
